Mamrikaya Pulihora (Spicy Mango-Flavored Rice)

Ingredients |
- 1 large Green Mango
- 1/2 Dried coconut
- 2 tablespoons Bengal gram dal
- 1 teaspoon Cumin seeds
- 2 teaspoons Coriander seeds
- 1/2 teaspoon Fenugreek seeds
- 2 tablespoons Groundnuts
- 1 kg Rice
- 1 tablespoon Oil

- 1/4 teaspoon Turmeric powder
- 4 Green chillies
- 6 Red chillies
- 1 teaspoon Mustard seeds
- 1 teaspoon Black gram
- 8 Curry leaves
- 1/2 teaspoon Asafoetida
- Water
- Salt (As per taste)

Method |
Cut the mango and coconut into small pieces and keep aside. Boil chana dal in water till tender. Dry roast separately cumin, coriander and fenugreek seeds and grind each separately. Peel and fry the peanuts and powder them coarsely. Boil rice and spread on a cloth to dry.
Heat 1 tbsp oil, add salt, turmeric powder, ground spices and mango. Add to rice with cooked bengal gram, groundnut powder, coconut and chopped green chillies.
For Seasoning
Heat oil and fry dry red chillies, mustard seeds, black gram, curry leaves and asafoetida till they become dark brown. Add to rice and mix together. This can be eaten plain or with rasam.
