 Shufta (Dry Fruit Delight) 
Ingredients
  • 1/2 cup Mixed nuts
  • Ghee
  • 1 tablespoon Dry coconut pieces
  • 1/4 cup Cottage cheese
  • 1/4 cup Sugar
  • 1/4 cup Water
  • 1/2 teaspoon Milk
  • 4 strands Saffron
Method
For the mixed dry fruit use: dried dates, figs, apricots, almonds, pistachio, raisins, walnuts etc. Boil all the dry fruits except the walnuts in very little water. Drain and cool. Chop into small pieces. Chop the paneer into small cubes.

Heat ghee and fry the chopped dry fruits and coconut together. Drain and keep aside. In the same ghee, deep fry the paneer till light brown in colour. Mix the dryfruits, coconut and paneer and keep aside.

Heat the sugar, water and milk to make the syrup. Stir till the suger melts. Remove from heat and strain. Reheat the syrup. Add the saffron and the fried dry fruit, coconut and paneer mixture. Cook uncovered on a low flame for a few mintues until the mixture becomes quite dry.

Serve at room temperature.
