 Kobbari Halva (Coconut Halva) 
  • 2 Coconuts
  • 2 glasses Water
  • Sugar
  • 12 Cashew nuts
  • 10 Raisins
  • 100 grams Clarified butter
  • 5 Cardamom
  • 3 tablespoons Rice
Grate the coconuts. Soak the rice for 4-5 hours. Grind the soaked rice and grated coconut with 1 cup warm water. Strain and extract as much liquid as possible.

Measure the coconut extract. The quantity of sugar has to be half the quantity of the liquid extracted i.e. if the extract is 4 cups the sugar added has to be 2 cups.

Heat the sugar-coconut extract in a thick-bottomed vessel stirring continuously till it thickens. Add ghee, a spoon at a time till it starts leaving the sides of the pan. Stir in the nuts, raisins and cardamom powder.

Pour it into a greased plate and set for 30 minutes. Serve cold.
