Kobbarai Anam (Savoury Coconut Rice)

Ingredients |
- 250 grams Basmati rice
- 3 tablespoons Oil
- 1 teaspoon Mustard seeds
- 3-5 Red chillies
- 2 Green chillies
- 1-2 Garlic cloves
- 1/2 inch Ginger
- 1 teaspoon Black gram
- 2 tablespoons Bengal gram

- 1 sprig Curry leaves
- 1 pinch Turmeric powder
- 1 pinch Asafoetida
- 150 grams Grated coconut
- 1 teaspoon Chopped coriander leaves
- 1 tablespoon Lemon juice
- Water
- Salt(As per taste)

Method |
Boil rice for 5 minutes, drain well and spread out on a tray to cool. Roast the coconut till it is golden brown. Leave 1 tbsp aside for garnishing.
Heat oil in a pan, saute mustard seeds, broken red chillies, chopped garlic, chopped ginger, and sliced green chillies until the seeds begin to splutter. Add both dals, curry leaves and turmeric. Fry until the dals turn golden. Add asafoetida, salt, grated coconut and rice, mix thoroughly and cook for a few minutes. Remove from heat and keep for 1 hour to allow the flavours to penetrate.
Reheat till the rice is cooked and serve garnished with chopped coriander leaves and grated coconut.
