Hare Badam ka Kalia (Mutton with green almonds)

Ingredients |
- 1 kg Mutton
- 1/4 teaspoon Asafoetida
- 2 teaspoons Ginger powder (dried)
- 4 cups Milk
- 25 Green almonds
- 5 tablespoons Fresh cream

- 12 tablespoons Curd
- 2 teaspoons Kashmiri garam masala
- 8 Cardamoms (green)
- 1 pinch Saffron
- 10 tablespoons Oil

Method |
Fry the almonds till they are crisp.Heat oil in a deep bottomed pan, add asafoetida, ginger powder and mutton pieces. When the meat starts browning, add half the milk and let it simmer with a lid for 10-15 minutes. The meat should almost be tender by now.
Gradually add the green almomds with the remaining milk, curd and whipped cream and stir. Leave it on a slow flame till the gravy gets thick. Mow add the cloves, salt, garam masala, cardamoms, saffron and keep stirring gently. Leave it on a low flame to cook till the meat is completetly tender.
