Method |
Blanch almonds in hot water. Soak for 15 minutes, remove the skin and grind to a fine paste. Put in a pan. Cover with water and boil on medium heat. When the liquid starts bubbling, froths on top and turns greenish, remove from fire and strain quickly through a cloth. Put the strained liquid back on fire. Add sugar and bring to boil slowly, stirring constantly even after it boils. Remove from flame when syrupy. Strain through a muslin cloth. Do not press out the liquid, let it drip through. Bottle the strained liquid and refrigerate.
Serve diluted with water. The sherbet will turn white when diluted with water.
